Our search has recently lead us to a plantation on the tiny remote Isle of Principe off the West African Coast. The lush jungle bathed in the salty breath of the South Atlantic Ocean, this is the home of a saint-like chocolatier named Claudio Corallo. A man who has managed to re-discover the ancient lost art of making real to-die-for chocolate.

Health Benefits of Chocolate
If you are trying to lose some weight, Dr. Aziz suggests that you consider eating some dark chocolate made with cocoa butter. He also suggests that you choose only organic dark chocolate that is at least 70% cocoa. "The higher the percentage of cocoa found in chocolate, the better it is for your cardiovascular health," Provided of course he notes that you choose the chocolate that has the least amount of added sugar or better yet no sugar added.
"Cocoa contains flavonoids, which have anti-platelet properties that prevent blood clotting." Dr. Aziz also looked at a Dutch study that found, "eating dark chocolate can cut the risk of cardiovascular disease by 21 percent and can years to life expectancy." The best thing about eating organic dark chocolate with reduced sugar is that it does not wreck havoc with your insulin and does not contain trans fats. One way to enjoy dark chocolate without the excess calories of a full chocolate bar is to melt some of the chocolate and dip strawberries or other fruit for a delicious snack.
